Ok: the veal loin you see is wrapped in pancetta, the puree is corn/shallots, then we have string beans and chanterelle sautéed in garlic. on the side of the meat it's a soffritto quenelle of onion; leeks; garlic and chopped tomatoes.
garnish: we have a fresh green shiny parsley leave (it's a super classic that i respect) and bright yellow olive oil.
it's beautiful, simple and amazing.
